Low-Carb Grilled Lemon Herb Chicken

Low-Carb Grilled Lemon Herb Chicken

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 2 lemons, juiced and zested
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions:

  1. In a bowl, whisk together the lemon juice, lemon zest, minced garlic, olive oil, dried oregano, dried thyme, salt, and pepper to create the marinade.

  2. Place the chicken breasts in a large resealable bag or a shallow dish. Pour the marinade over the chicken and make sure it's evenly coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes (or longer for more flavor).

  3. Preheat your grill to medium-high heat.

  4. Remove the chicken from the marinade, allowing any excess marinade to drip off.

  5. Grill the chicken breasts for about 6-7 minutes per side or until they reach an internal temperature of 165°F (74°C) and have nice grill marks.

  6. Remove the chicken from the grill and let it rest for a few minutes.

  7. Serve the grilled lemon herb chicken garnished with fresh parsley, if desired.

This low-carb grilled chicken is a great source of lean protein and is bursting with fresh, zesty flavors. It's perfect for a healthy, satisfying meal. You can pair it with a low-carb salad or your favorite low-carb side dish for a complete and delicious meal.
